4 tomatoes. Cup basmati rice, 2 medium onions, 2 tbsp sambar powder, 1 bundle cilantro, 2 tbsp refined oil, 1/2 tsp garlic paste, 3 tsp green chilies, 1/4 tsp turmeric, essential salt, 1/2 tsp ginger paste, 2 tsp pinch of red chili, 1/4 tsp mustard for spice, 7 tsp of curry, a pinch of asafoetida, 2 red chilies
Step – Boil 1 rice
Rinse the basmati rice, filter, and soak for about 20 minutes. Take a deep pan. Put on medium flame and add water to it. When the water is hot add the soaked rice. Cover the pan with a lid and cook over medium flame until the rice is softened. Now pull it out and set it aside.
Step – 2 Add tomato puree, onions, and spices
Now put the chopped tomatoes in a grinder and mix well. Remove the puree from the bowl and set it aside. Now heat 2 tbsp oil in a pan and add mustard, asafoetida, curry powder, and dry red chilies. Add onion and fry till light pink. Then add the greens and ginger-garlic paste. Fry these ingredients for a minute.
Step – 3 Add tomato puree to the roasted onions and cook, mixing with the rice
Now you need tomato puree, turmeric powder, red chili powder, sambar powder, and salt. Cook until the oil separates. Add cooked rice to tomato gravy and mix well. Then place the tomato rice in a serving bowl and garnish with chopped cilantro. Serve hot with papad, potato chips, or raita.
